Curried Tomato and Corn Chowder

This is the kind of cooking I love to do during the summer. Finding ways of using up every bit of vegetables from the CSA or farmer’s market can be challenging (when you have pounds of zuchini every week) and lots of fun.

This week my husband was visiting his dad’s farm in eastern PA with the kids. They came back with lots of veggies, including 40 (yes, that’s right, I said 40!!) ears of corn and a bag of tomatoes, as well as a gallon of raw goat’s milk. Great opportunity for a chowder! (more…)

Roasted Beet Salad with Walnuts and Feta

I love beets!  My family, on the other hand is not so keen on them. But since we got a huge bunch from the CSA this week I had to use them.  

Beets are high in folate, manganese, potassium, dietary fiber and vitamin C. They can be beneficial in the fight against heart disease, inflammation, and they have been shown to be especially beneficial  against colon cancer.

The All American and Healthy 4th of July!

Asian Cole Slaw

¼ cup natural peanut butter (chuncky)
**If you cannot have peanuts, use tahini

1 Tbsp fresh lime juice

1 Tbsp fresh grated ginger root

2 tsp grated garlic

2 tsp agave nectar or maple syrup

1 tsp soy sauce

Brazilian Collard Greens

OK, I’ll admit, the thought of sprouting scared me a bit. Just to imagine that I would have to tend to yet another living thing (besides the kids, dog, plants and my kombucha culture) in my Manhattan apartment just turned me off to the idea.

My Weekly Shopping Trip – Part 1: The grocery list

A couple of weeks ago I decided to keep track of all the meals for my whole family for a week.  Now let me tell you, this is a bit of a challenge for me especially since I don’t work well with set menus and making plans ahead of time.  I’m more comfortable just having food in the pantry/refrigerator and letting my days guide my meals. It all depends on my mood, how much time I have, what activities my family has going on, etc. So keeping track of everything took some discipline. (more…)

Homemade Granola

Granola is one of those things that is just super easy to make and it ends up being so much cheaper made at home then bought at the store. I try to by most of my organic grains, beans and seeds in bulk, which makes it even cheaper. And I can customize it to my family’s taste. (more…)
