What Came First: the watermelon or the seeds?
Watermelons are the quintessential summer fruit to me (together with blueberries and tomatoes!). And though they feel like mostly water (90% water to be exact) they pack a nutritional punch.
Watermelons are high in vitamins C and A, B1 and B6, potassium, magnesium and lycopene (in red ones) to name a few. Most store-bought watermelons have red/pink flesh but if you are getting yours from local farmer’s markets and CSAs there is a good chance you might find some yellow, orange and even white ones.
